Brown sugar is granulated sugar with a characteristic caramel-like flavour and slight moisture content, due to the addition of a small amount of molasses (typically less than 10%). The molasses imparts a rich brown colour, extra moisture, and a distinct caramel flavour. Dark brown sugar contains more molasses than light brown sugar, resulting in a stronger flavor. It is commonly used to add sweetness, colour, and depth of flavour to baked goods and confections.
